Watermelon & Basil Salad
The green and red in this salad makes such a beautiful Christmas-themed dish. Perfect presented at any Christmas dinner, BBQ and super refreshing in the Aussie heat!

INGREDIENTS:
3 cups watermelon balls
1-2 small Lebanese cucumbers diced
1 cup packed basil leaves
1/2 a batch Cultured Lemon & Herb almond "Feta" (or dairy free cheese option of your choosing)
DRESSING:
2 Tbsp Balsamic Vinegar
1 Tbsp Extra Virgin Olive Oil
1 tbsp Gevity Rx Lemon & Herb Bone Broth Body Glue
METHOD:
In a small bowl, whisk all dressing ingredients till combined
Use a melon-baller to create your watermelon balls. If you don’t have one simply cut the watermelon into 1-inch cubes
Add watermelon balls, diced cucumber and basil leaves to a large bowl and toss gently to combine
Once on serving tray add chunks of the almond feta to decorate and drizzle with the dressing
