Creamy Red Lentil Dahl

Warm up your Meatless Monday with this belly-warming, gut nourishing dahl. Perfect for those cold nights & even better reheated the next day for those cold lunches.

INGREDIENTS:

  • 1 cup (200g) red lentils - rinsed
  • 15g grass-fed butter
  • 1 cup onion - diced
  • 2 cups water
  • 1 cup tinned coconut milk
  • 1 tin diced tomatoes
  • 1 tsp turmeric
  • 1/2 tsp chilli powder
  • 1 tbsp Gevity Rx Bone Broth Body Glue - Natural
  • Salt and pepper to taste

METHOD:

  1. Over medium heat, melt butter in a saucepan and sauté the onions until fragrant
  2. Add spices and stir for 1 minute until golden
  3. Add remaining ingredients and bring to a boil
  4. Cover with a lip and reduce heat to a simmer
  5. Simmer for approx 25 minutes stirring every 5 minutes so the mixture doesn’t stick to the bottom (Add more water if necessary)
  6. Serve on a bed of spinach, quinoa and top with fresh coriander and coconut yoghurt

NOTES / TIPS:

  • Lentils will absorb as much liquid as you put in so don’t stress if it looks too liquidy
  • If the mixture looks too dry add more water or coconut milk
